When sugar is dissolved, add the barm and leave them to ferment during 14 days. A lot of modern wines are fermented at low temperature and then wines as a rule have some fruity peculiarities. White wines are usually made in big, cool, steel containers. But the most favourable variant for better quality of wine is to ferment it in oak casks.
The next stage is bottling. Before bottling keep in mind that different types of wines are matured during different periods – from days to years.
Remember that after bottling the flavor of wine can evolve slowly, so it will be better for wine quality and flavor to have long ripening.
Some things you should do or not do in winemaking:
- you haven’t an opportunity to sell your wine without license;
- don’t use metal containers or containers, made out highly resinous wood;
- for better fermenting process use oak casks;
- don’t add a lot of sugar;
- stir only once a day;
- be patient;
- keep your utensils and equipment clean;
- it is better to keep red wines in dark bottles;
- use new corks or if they are old, it is be obligatory to boil them;
- taste the changes of wine flavor from time to time to control the process of winemaking.
